Processing step

● Fresh cantaloupe without degradation or pests was selected, washed and disinfected with disinfectant.

●After peeling and slicing, the meat was soaked in 0.5% edible citric acid and 0.1% ascorbic acid solution for 25 minutes, color protection treatment was carried out, and then stored in a pre-cooling room with a temperature of 4℃ ~ 5℃.

●After half an hour, put the pre-cooled pulp into the quick-freezing equipment for quick-freezing treatment. The air temperature of quick-freezing is -55℃, the air flow rate is 10 m/s, and the quick-freezing time is 2 hours.

●The frozen pulp is placed in vacuum freeze-drying equipment, the vacuum degree is kept at 70Pa, the cold trap temperature is -45℃, the heating temperature is controlled at 50℃, the time is about 12 hours, so that the material water content is reduced to less than 3%, and then packaged, that is, the product.
