Processing step
Fruit Selection
The quality of the final product begins with the raw material. Only fresh, ripe oranges are selected for processing. These oranges must be free from rot, mold, pest damage, and any signs of overripeness. In addition, the fruit must meet strict safety standards-there should be no pesticide residues exceeding regulatory limits, no heavy metal contamination, and no foreign matter. The selection stage ensures that only premium fruit enters the production line, which directly impacts the taste, aroma, and nutritional content of the finished powder.
Cleaning
Once selected, the oranges are thoroughly cleaned to remove dirt, dust, pesticide residues, and other surface contaminants. Pure water is used in combination with two cleaning techniques:
Bubble washing: Streams of bubbles gently agitate the water, helping to loosen and lift away debris.
Brush cleaning: Soft brushes lightly scrub the fruit surface to remove any stubborn particles.
This dual process ensures that the fruit skin is completely clean, which is essential for food safety and quality.
Draining Water
After cleaning, excess water must be removed from the fruit surface. This is done through gentle air-drying or mechanical draining systems to prevent dilution of the juice during the pressing stage and to minimize microbial growth.
Pressing
The cleaned and drained oranges are fed into pressing equipment to extract juice or pulp. Depending on the desired flavor profile and texture, some peel may be included, though often it is removed to avoid excessive bitterness. The pressing process produces a thick orange mash or puree.
Filtration
The freshly pressed mash is passed through filtration equipment to remove coarse fibers, seeds, peel fragments, and other residues. This step results in a smoother liquid base, which helps in achieving a uniform texture in the final powder.
Clarification
To further improve clarity and stability, the filtered juice undergoes static clarification. This involves letting the liquid stand undisturbed for a set period, allowing suspended solids to settle naturally. Clarification improves the color, mouthfeel, and solubility of the final powder.
Concentration
The clarified juice is concentrated to reduce water content before freeze-drying. This concentration step typically involves 2–3 times volume reduction using either:
- Membrane concentration – where water is removed via selective filtration membranes.
- Vacuum concentration – where the juice is heated at reduced pressure to evaporate water at lower temperatures, minimizing nutrient loss.
- Concentration not only reduces the freeze-drying time but also enhances the natural sweetness and flavor intensity of the orange juice.
Freeze-Drying
This is the core step in preserving the orange's freshness and nutrients. The concentrated juice is first cryogenically frozen to extremely low temperatures, turning all moisture into ice crystals. It is then placed in a vacuum freeze-dryer, where the ice sublimates directly into vapor without passing through a liquid phase. This gentle drying method retains vitamin C, flavonoids, and volatile aromatic compounds, giving the powder its natural taste and bright color of Freeze-dried Orange Powder.
Low-Temperature Crushing
Once dried, the solid orange sheets or granules are broken down into smaller particles. Low-temperature crushing is used to prevent heat damage, ensuring that the powder remains rich in nutrients and flavor compounds.
Sieving
The crushed material is passed through sieves to achieve a uniform particle size. This step ensures that the final product has a consistent appearance and dissolves evenly in liquids. Finer powders are often preferred for applications in beverages, baking, and nutritional supplements.
Packaging
The sieved powder is transferred to a constant temperature and humidity-controlled environment for packaging. This prevents moisture absorption, which can lead to clumping and spoilage. Packaging materials with excellent moisture and oxygen barriers are chosen, such as laminated aluminum foil bags or vacuum-sealed pouches.
Sterilization
To ensure microbial safety, the packaged powder may undergo sterilization. Common methods include vacuum sterilization, UV light treatment, or mild heat sterilization. These processes eliminate any residual microorganisms without significantly affecting product quality.
Finished Product Storage
Finally, the sealed and sterilized Freeze-dried Orange Powder is stored in a clean, cool, and dry warehouse until it is ready for shipment. Proper storage conditions maintain the Freeze-dried Orange fruit Powder product's freshness, flavor, and nutritional content over an extended shelf life.
