Processing step
● Selection of lemon fruit:
Select ripe raw lemon fruit, and select different grades and grades of lemon fruit except rotten, moldy and moth-eaten fruit in raw lemon fruit
● Pretreatment:
Cleaning, ozone sterilization
● Juicing and separation:
Juice is squeezed by semi-cutting juicer or cup juicer, and oil, seeds and residue are separated, and then the lemon juice is filtered and pasteurized.

● Enzymatic hydrolysis:
Add 0.01 -- 0.05 % pectinase and 0.01 -- 0. 001% -- 0. 003% bitter invertase in lemon juice, control the temperature of 40°C -- 54°C, 30 min -- 50 min, the biological enzyme relief bitter.
● Vacuum concentration:
The lemon juice after enzymatic hydrolysis is transferred to the vacuum evaporator for concentration, the feed temperature is controlled 30°C -- 55°C, the vacuum degree is IOOPa -- 5Pa, the end sugar degree is 40° Brix -- 65° Brix concentrated lemon juice;
● Freezing:
After loading the concentrated lemon juice, send it to the freezer, seal it and freeze it. Control the temperature from _30°C to -50°C, and confirm that the indoor material temperature is lowered to the set temperature as the end point for 6h-12h.
● Vacuum freeze-drying:
The frozen concentrated lemon juice is quickly transferred from the freezing chamber to the vacuum freeze-drying machine working chamber for vacuum freeze-drying. The material temperature is controlled below 60°C, the time is 18h-42h, the vacuum degree is 4Pa-8Pa, and the moisture is less than 3-5%. Before the vacuum freeze-dryer is opened and discharged, sterile filtered dry air with humidity not higher than 10% is introduced into the drying chamber to break the vacuum and discharge the material.

● Crushing, screening and packaging:
After the dry material is discharged from the warehouse, it shall be crushed and screened in a clean and closed environment with air dryness of 5%-10%, divided into powder with particle size of 80-200 mesh, weighed and packed with high-resistance oxygen materials or vacuum packaging to become vacuum freeze-dried lemon juice powder finished products.
