Physicochemical Properties Of Capsaicin Pepper Powder:

Capsaicin is also known as Capsaicin. It is an organic compound with the molecular formula C18H27NO3. The molecular formula is C18H27NO3. In nature, it exists in Capsicum annuum and its varieties, and is precipitated from petroleum ether as monoclinic crystals and rectangular flakes. Maximum UV absorption is at 227 nm, 281 nm (ε7000; 2500). It is an extremely pungent vanillamide alkaloid. Capsaicin pepper powder is a white crystalline powder . Production methods:

There are three main means of preparation of capsaicin pepper powder: natural extraction method, chemical synthesis method and biochemical method.

①Natural extraction method:

Early capsaicinoid extraction with fresh red dried chili peppers crushed and extracted with organic solvents. Concentrated to obtain a red to orange-red oily liquid.
