Raw Material Preparation
The kojic acid powder production begins with the selection of suitable carbohydrate sources, typically rice, rice bran, corn starch, molasses, soybean derivatives, or malt extract. These materials provide the necessary carbon and nutrient supply for microbial growth. The raw materials are thoroughly cleaned to remove impurities and contaminants, then soaked in water-often overnight-to ensure adequate hydration and uniform texture before thermal processing.

Steaming and Sterilization
After soaking, the raw materials are steamed under controlled temperature and pressure conditions. Steaming softens the substrate, gelatinizes starch, and sterilizes the material by eliminating unwanted microorganisms. This step is critical because it creates an optimal environment for the desired fungal strain to dominate during fermentation without microbial competition.
