What Is Egg Yolk Lecithin?
Bulk Egg Yolk lecithin is a natural mixture of phospholipids obtained by extracting and refining egg yolks. It is an amphiphilic molecule. One end is a hydrophilic nitrogen- or phosphorus-containing head, and the other end is a hydrophobic lipophilic) long hydrocarbon-based chain. Depending on the type of backbone alcohol, egg yolk lecithin is divided into two main groups. One group has glycerol as its backbone and is called glycerophospholipids, while the other group has sphingomyelin as its backbone and is called sphingolipids.
What Does Egg Yolk Lecithin Do?
Pure egg yolk lecithin has many essential physiological functions, such as antioxidant activity, antimicrobial activity, anti-inflammatory activity, improvement of fat metabolism, retinal protection, improvement of cardiovascular management, and brain health.
