What is lycopene?

Lycopene is a naturally occurring carotenoid pigment widely found in tomatoes, tomato-based products, and red fruits such as watermelon and grapefruit. It is responsible for the characteristic red color of these plant foods and is recognized as one of the most powerful natural antioxidants. Due to its strong free-radical-scavenging ability, lycopene is widely used not only as a food colorant in processing applications but also as an important ingredient in dietary supplements, functional foods, and cosmetic formulations.

Structurally, lycopene has a long-chain polyunsaturated hydrocarbon backbone containing 11 conjugated double bonds and 2 non-conjugated double bonds. This unique molecular structure gives it excellent antioxidant activity, but it also makes the compound relatively unstable. Lycopene is susceptible to oxidation and cis–trans isomerization during processing and storage. Compared with the trans form, cis-lycopene is more easily digested and absorbed by the human body. Therefore, promoting the conversion of trans-lycopene into its cis form is particularly important for improving its bioavailability and application value.

 

What Does Lycopene Do?

• Antioxidant effect
Scientists have proved that unilinear oxygen and oxygen-free radicals in the human body are the main culprits that attack the body's autoimmune system. Is Lycopene Safe?

China has approved synthetic lycopene as a colouring agent (GB 2760-2011 Standard for the Use of Food Additives). It can be used in beverages (except packaged drinking water) with a maximum use level of 15mg/kg, in candy with a maximum use level of 60mg/kg, in solid soups with a maximum use level of 390mg/kg, and in semi-solid composite seasonings with a maximum use level of 40mg/kg (all of the above are based on pure lycopene). In foreign regulations, JECFA considered lycopene as a pigment and nutrient supplement in 2006.

 

The European Union and in 2009 has approved the synthetic lycopene, natural lycopene, wholesale lycopene extracted from Aspergillus trisporus to enter the market as a new ingredient in food. They have also approved lycopene oil products derived from tomatoes as a new ingredient in foods for special therapeutic uses.

 

Australia/New Zealand has approved it as a food additive for use as a colouring agent and dietary supplement. Codex Alimentarius Commission International has approved 3 sources of lycopene. i.e. tomato extract, Trispora brachycarpa extract and synthetic lycopene powder as food colouring agents.

The extraction and separation methods of wholesale lycopene mainly include organic solvent extraction method, enzyme reaction method, microbial fermentation method, synthetic method, supercritical CO2 extraction method and microwave method. Among them, the most traditional method is the solvent extraction method (i.e., leaching method). However, the traditional extraction method has the disadvantages of long extraction time, high labour intensity, high energy consumption for raw materials and processing, and easy destruction of heat-sensitive components.

 

The chemically synthesised lycopene contains a variety of isomers and impurities, thus prohibiting its use in health products and sharply reducing its market share. The natural extraction method is limited by raw materials, the cost is difficult to further reduce and the wholesale lycopene production is obviously affected by the season. Thus, microbial fermentation production method has shown obvious advantages in recent years.

It has been found that for dietary sources of lycopene, cis lycopene is more readily absorbed than all-trans lycopene. It has a higher bioavailability compared to the trans form.
